Shiso, a Japanese plant with a characteristic smell and taste, is known for its excellent antibacterial action. It is also the perfect marriage as a garnish for raw fish, such as sashimi and temaki-sushis.
This essence comes from madara-jiso, a variety of shiso recognizable by its leaves with faces of different colors. They are green on top and purple underneath.
